High Fructose Corn Syrup There are many controversies about high fructose corn syrup when it comes to the debate of whether is causes certain diseases or if it is healthy or not. High fructose corn syrup is composed of either 42 percent or 55 percent fructose. It is a sweetener made from corn that also contains sugars that are primarily glucose and high sugars (chains of glucose). Many people are skeptical against high fructose corn syrup which is also known as (HFCS), but there are many facts that prove the myths about HFCS wrong. An example would be that people tend to believe that high fructose corn syrup is not natural, but in fact it is made from corn, a natural sweetener as well as a natural grain product. People also tend to associate high fructose corn syrup with obesity, but obesity is actually caused by consuming more calories than are expanded. High fructose corn syrup has numerous benefits being that it is a natural sweetener. An example would be that HFCS provides texture and enhances “mouth feel”, and it acts as a preservative that protects the falcon, aroma and color of fruit used in jellies, jams and preserves. Also, it provides fermentable sugars that help bread rise and it helps bake brown goods. Another benefit would be that HFCS is that it retains moisture so high fiber products taste better and baked goods stay fresh. Contributing to the volume of ice cream is another benefit of high fructose corn syrup. Also, HFCS reduces harsh vinegar or acid bite in a non-sweet food and it controls freezing, melting and oiling points of products. There has been a recent discovery that there is an association between the consumption of high fructose corn syrup and the prevalence of Type 2 diabetes. Researchers have found through a study that Type 2 diabetes prevalence was 20 percent higher in countries where the food supplies contained high fructose corn syrup. Countries where the food supply did not include HFCS had a 6.7 percent prevalence to Type 2 diabetes, and countries that contain HFCS in the food supply had a 8 percent prevalence. High fructose corn syrup is used as a sweetener in several foods such as soda and candy because it is in fact a kind of sugar. Studies show that HFCS consumption may result in negative health consequences and that there are clear distinctions from HFCS and natural sugar. There are facts that go against that specific studies results for example, there is a scientific consensus that table sugar and high fructose corn syrup are nutritionally and metabolically equivalent.
