Having a well-balanced diet and eating nutritiously was instilled in me as a child. My parents raised eight children with the belief that eating healthy foods was crucial in maintaining proper growth and development. We were very lucky. We were never deprived of food and always had an abundance of fresh garden (organic) vegetables and fruits, dairy foods, various selected meats, and occasional sweets and soft drinks for special rewards or occasions.
Through the knowledge of my recent graduate course, “Creating Health and Balance in Today’s Classroom”, along with my personal regard to my health and the health of my loved ones, many of the foods we have consumed throughout our lives, has imposed a major risk on our health.
With the continuation of heart disease being the number one cause of death in our country along with, cancer, and other diseases and contributing factors that follow, you’d think people would care more about their health, yet in fact, people continue to eat unhealthy foods that cause unnecessary, early death. According to T. Colin Campbell and Thomas M. Campbell II (2004):
Heart disease will kill one out of every three Americans. According to the American Heart Association, over 60 million Americans currently suffer from some form of cardiovascular disease, including high blood pressure, stroke and heart disease.
