Less than a mile south of the historic Bridge of Lions — which whisks you from the northern tip of Anastasia Island into downtown St. Augustine — sits O’steen’s Restaurant, a plain concrete-block building. The red shrimp on its sign should be a signal. Owned by the same family for a long, long time, it serves up authentic southern seafood (fat, fried shrimp!) with homemade sides such as coleslaw and squash casserole. And real iced tea.…

With the way I personally like to eat my crawfish is that it has to be full of juice and flavour with the additional buttery, spicy seasonings. I would start off by going to the nearest local food market that sells crawfish by the sack. After arriving, i would then make sure they have a sack at least a 20 lb or higher, also known as the JUMBO size. If not, then it is not going to be worth your time and money at all. You would then need to examine the live crawfish, making sure they are all alive and looking fresh.…

Gumbo, a light brown soup, but served over steamed rice is what we eat during the cooler months of Louisiana. Gumbo is way more than just some brown soup it's andouille, cayenne pepper, roux, chicken, bell peppers, and garlic. My grandmother, Maman (which is mom in French), had a way of making gumbo do the zydeco in your mouth. Our family bonded over Gumbo by discussing why we felt that George Bush should be doing more for the Katrina victims, or why gas prices were almost three dollars, but most of…

At first glance you might think they are from out of this galaxy, you might think they are gross, stenchy ,or even rodent like, but in the end they will smell and taste like a dish from the last supper. Deep in the scorching southern states of America you can find them in every muddy, muggy swamp.
