Gumbo: Light Brown Soup

Gumbo, a light brown soup, but served over steamed rice is what we eat during the cooler months of Louisiana. Gumbo is way more than just some brown soup it's andouille, cayenne pepper, roux, chicken, bell peppers, and garlic. My grandmother, Maman (which is mom in French), had a way of making gumbo do the zydeco in your mouth. Growing up, Gumbo was a reason to get everyone together and spend time with each other; just like all the gumbo ingredients spending time together in that tall silver Magnalite pot that Maman kept on her stove waiting for the family to devour it.
