Is eating grilled chicken healthy for you or can there be an underlining issue that can be hazardous to your health. Lauren Hodge was sitting at her doctor’s office reading an article about a lawsuit that was happening between the Physicians Committee for Responsible Medicine and seven different fast food places. This lawsuit regarding the Preposition 65 which states that if there is anything in a food product the restaurants are obligated to inform everyone regarding it with a clear warning. Another observation that sparked her research was while she was eating grilled chicken marinated in lemon juice. She noticed that the edges were white which she found out that it was called denaturing. Denaturing is a process in which the proteins will change shape and lose their ability to chemically function. These two ideas sparked her into doing research on whether carcinogens will decrease due to …show more content…
By knowledgeable about what is in our food can help people make the choice to decrease them in their diets. Once she decided that this is what her research will be on she then needed to locate a lab. She emailed many, but only one Penn State University got back giving her permission to use their facilities. The first step was to marinate the chicken in either lemon juice, salt water, brown sugar or soy sauce, grilled it and transported the chicken to the lab. Once she got it to the lab, she then extracted the chemicals, changed the pH. The final step was to run the samples she got from the chicken through a high-pressure liquid chromatography-mass spectrometer that separated the compounds. She was then able to analyze how many carcinogens was actually in the grilled chicken with each
