1 DEFINITION: Bacon is defined as; "salted and smoked meat from the back or sides of a hog" [1]. This is cured meat that is overseen by The Food Safety and Inspection Service (FSIS). FSIS is a subsidiary of the US Department of Agriculture (USDA), that "requires safe handling instructions on packages of bacon and all other raw or partially cooked meat and poultry products as part of a comprehensive effort to protect consumers from foodborne illness"[2].
2 AGENCIES The agencies that are affiliated with "all bacon found in retail stores is either USDA inspected for wholesomeness or inspected by State systems that have standards equal to the Federal government" [2]. The nutrient panel includes the following information; Calories, total fat, sodium, total carbohydrate, dietary fiber, sugars, protein, vitamin A, vitamin C, calcium, and iron. The information is based on a per-serving limitation, this label also includes the information on what a serving size is and how many servings the package contains. All the information on the nutrient panel is based on the daily-recommended 2,000-calorie diet. This information is required to be on the panel, these standards are regulated and set by the FDA.
