After having three children, two daughters and a son, Elsa’s husband became ill with Parkinson’s disease. In order to support her family, Elsa worked multiple jobs, including working at Militzers Bakery. While working at the bakery, Leon Schneider, of Leon’s Frozen Custard, would come in and work a custard machine with which Elsa was fascinated. After becoming good friends with Schneider, Elsa used his help to start Kopp’s Frozen Custard Stand.

She was determined to succeed in her business, and never gave up even when there were hard times. Elsa’s generosity brought customers from all over. She truly cared about them and put their needs in front of hers. Commitment was also a great quality Elsa had. While at the ice cream stand, Kopp would sometimes work over 12 hours a day. Her passion and creativity spurred the success and popularity of her business. She loved making custard and experimenting with different flavor concoctions.
