1. Introduction I would say the food I eat is usually available to me when I feel the urge to consume. I wouldn’t say my food selection is abundant by any means but more of having food to eat when necessary. The cost of food varies for me, when there is nothing to eat at the house I usually go pick up fast food or order a pizza. I am provided something to eat every day. I still stay with my mother so when there is something in the refrigerator I usually get provided a meal. I would have to be honest, I usually never plan meals; I know that it is a bad habit but I have been doing a better job on meal prepping so I can have a better well balanced diet. My mom likes to cook so she is usually in the kitchen cooking when I return home. When she …show more content…
During this week I felt more tired than I usually feel. I did well on meeting the elements for protein by eating an average 69 grams and the target was only 56 grams. I fell short on the target of fiber at 38 grams and only consumed 17 grams. I came up short on vitamins D, E, and K that I needed to consume. For Vitamin D the target was 15 ug and I ended with 3ug, Vitamin E the target was 15mg AT and I consumed 5 mg AT, for Vitamin K the target was 120 ug and I had only 53 ug. The other vitamins including Folate, Thiamin, Riboflavin, and Niacin I met the requirements. When it comes to the Dietary Guidelines for Americans 2010 a person is supposed to consume less than 10% calories form saturated fats and I ended up getting exactly 10% and I went way over the amount of sodium it says to consume a day. I target for sodium is set at less than 2300 mg and I consumed over 3000 mg. For cholesterol I ate an average of 276 mg and the target was to be less than 300 mg. My total calorie intake is lower than expected to reach the target goal of 3,000 calories, I fell short of the goal and only reached an average of 2,316 calories. Of those calories I reached the goals when it came to protein and carbohydrates. As I indicated above about how my fiber count was low, in order to improve that I can include foods I like such as: raspberries, bananas, strawberries, rye bread, carrots, broccoli, and pistachios. I like food that has fiber in them but it seems that I don’t look at what I eat before I actually eat it. In the near future I will try to include these foods into my diet somehow. Another plan of mine is to eat more so I can get the total calories I consume up to around 3,000 calories, I am currently averaging 2,316 calories during this assessment. I am not aware of anything that indicates that I need a multivitamin or mineral supplement. If I do not eventually lower my sodium intake my kidneys could have trouble trying to keep up with the extra sodium in the bloodstream. As time goes on the extra toil can thicken my blood vessels, leading to high blood pressure, heart attack, and stroke and also lead to heart failure. When it comes to past family history I would like watch my intake of sugar because of family history with diabetes.     So, in order to increase my intake of folate, obviously a multivitamin would help a lot but some foods rich in folate include asparagus, broccoli, citrus fruits, avocado and brussel sprouts. So, consuming more of these would higher my intake of folate too.
