Summary
Throughout the Fitwell nutrition project I made many discoveries about my diet. Based on the Harris Benedict Equation, I found that I am eating approximately four hundred calories more than the suggested amount. This somewhat surprised me because I have not gained any weight since I arrived at college. However, what most likely put me over the top was my consumption of soft and crunchy white chocolate macadamia nut cookies that I so much enjoy. Another aspect of my diet that I found disturbing was my very high consumption carbohydrates. From this information I plan to change

Health and nutrition, particularly my own, is something I have taken special interest in lately as I’ve come to realize I’m rapidly approaching the second half of my life and want it to be as good as, or even better than, the first half. If I were to be asked eight weeks ago if I was a healthy person, my answer would be a resounding, “Yes;” my regular physicals and blood work confirming my response. And while I still believe that to be true, what an eye opener the Diet Analysis project was, as far as understanding my actual nutritional intake in comparison to the Dietary Reference Intake (DRI) of nutrients recommended for optimal health and well-being. The following paragraphs not only detail the Diet Analysis PLUS program used for this project,…

Growing up, I have always wanted to dedicate myself to doing something special in life. I was born in a village in Mexico where public health and education were very limited. I recall, one day, accompanying my mother to a ladies house where there was a sick child. My mother was one of the women in the village who would take care of the sick; she learned everything she knew from my grandmother. When we got there, I saw my mother prepare some medicine and giving it to the ill child.…

However, this one week experiment of recording my diet and analyzing daily consumptions of nutrients made me realize that I need to improve my diet in carbohydrate and protein intakes, consumption of vitamin D, E, choline, and mineral intakes of potassium and sodium. To bring a well balance of macronutrients, I need to increase my protein consumption. My average protein intake is 15% of the AMDR, closer to lower range (10% to 35%). I will increase my protein consumption by eating more high quality proteins and planning my meals that include complementary protein dishes. I recognized that with my low physical activity, eating 59 % of my food intake from carbs was too high.…

Growing up I knew about vitamin E, C, A, D, however, I did not know that there are thousands of vitamins and minerals. I felt overwhelmed after reading this chapter because there is so much to look out for and looking at my diet analysis report I never really considered vitamins, because I just assumed that I am consuming them from my fruits and veggies which I am lacking. According to Colleen and Smith, “Although the vitamins are essential nutrients, the amount of vitamins we need to prevent deficiency is small” (2016, p. 275). Thus, I think a lot of people do not think much about the vitamin content of their foods. Yet, vitamins are also important because they assist in digestion, absorption and metabolism (Aschidamini, 2017).…

Only in the 1950’s did scientists in the United States begin studying the impact that diet has on people, and trying to find the most healthy type of diet for humans. The U.S. Department of Agriculture (USDA) and the Department of Health and Human Services (HHS) have released dietary guidelines for Americans once every five years since 1980. According to the most recent update on the USDA’s website, a healthy diet “emphasizes fruits, vegetables, whole grains, and fat-free or low-fat milk and milk products, includes lean meats, poultry, fish, beans, eggs, and nuts, and is low in saturated fats, trans fat, cholesterol, salt, and added sugars” (USDA, 2014). These recommendations are very different from a low carbohydrate diet. While there are many different types of low-carbohydrate diets, they all restrict the amount of carbohydrate consumed per day, usually ranging between 10-150 carbohydrates.…
