FSCN Mentoring Event

At the FSCN mentoring event, I spoke to Jessica Larson, RD. She is a registered dietitian at the Hy-Vee supermarket in Eagan. Hy-Vee is a supermarket that is focused on healthy lifestyle, so Larson is very involved there and educates the customers on nutrition, manages food allergies, and educates the public about nutrition labels, and more. There are many skills that are required for someone that works as registered dietitian at Hy-Vee. First, you need a very good background in nutrition and should be very educated about different topics in nutrition. Being knowledgeable about food allergies is very important because there will be many people who shop at the supermarket that will have questions about this topic. Cooking is also an important skill because often times you will be teaching others how to cook and how to alter recipes to make them more healthier or alter them for a food allergy or vegetarianism, etc. Another very important skill is communication. However, I also believe that the best of your knowledge comes from experience which I do not have that much experience yet in the nutrition field. Jessica had a lot of knowledge and experience because she was a Clinical Dietitian at Fairview Medical Center before she went to Hy-Vee. I also believe that I have good communication skills, but it is another thing to have good communication skills in the topic of nutrition which I also believe comes from expeiernce because I don’t yet know what the most common questions are or how to communicate things to make the most sense to someone that is not an expert in nutrition. This is a really important skill to have when working at a supermarket because you will come in contact with many different types of people and some know absolutely nothing about
