In this chapter the author talks about the life in the U.S. in the early 1900s. The struggles poor families had faced. The chapter talks about how meat factories back then, had a lot of irregularities in the work place. How employees didn't followed any sanitate rules. Factories back then didn't provide tools for the employees. Also according to the chapter “ There was no place for the men to wash their hands before they ate their dinner, and so they made a practice of washing them in the water that was to be ladled into the sausage” meaning that in the same water they used to washed their dirty hands, with germs, the same water they used to make the sausage.
