Have you ever wondered the difference between butter and margarine? Well, so have I. The difference is margarine is a butter substitute and non-dairy, while butter is dairy. Butter is usually made from milk or cream, but since margarine is non-dairy it is made from completely different things. Margarine is actually made from vegetable oils. For example, it can be made from corn, cotton beads, soybeans, safflower, and canola. It can also be made from coconut oil and palm oil, which is more popular now. Margarine’s full ingredients list contains 12 ingredients which are: vegetable oils (canola and sunflower oil) water, emulsifiers, salt, preservative 202, food acid, milk solids, maltodextrin, natural color, vitamins A and D, and flavor. They are the workers behind Oh Sweet Basil. They tested substituting in chocolate chip cookies. For example, they tested one cookie with butter, one with margarine, one with shortening, and one with coconut oil. After done with their experiment, they found that margarine created a cookie that was “very flat and quickly turned quite crisp”, and the cookie with butter was “soft in the middle, not greasy and the edges were chewy and wonderful.” In that experiment, she found of all the different substitutes, butter was still the best. This is one case in which butter beats margarine. Margarine from a tub can be used as a substitute for butter when it is called for as melted. For example, if my cookie recipe were to call for melted butter, melted margarine can be an easy substitute. If my cookie recipe, however, were to call for anything other than that, the margarine from a tub could make the cookie spread out more and make it different than how the butter would. Margarine from a stick would be different though. From a stick, it is basically the same consistency.
