What type of flour will raise a cake the highest? In this experiment there are 3 different types of flour with 3 different trials. Trail 1, organic flour rose the highest. Number 2, all- purpose flour rose the highest. And trial 3, all-purpose flour rose the highest. On average all-purpose flour rose the highest. All-purpose flour rose the highest because of a blend of high-gluten hard wheat and low-gluten soft wheat. Bread and organic flour did not rise the highest because they didn’t have high gluten. Some flaws in my experiment, I only added eggs to the organic flour cupcakes, but forgot to add eggs to the all-purpose and the Bread flour cupcakes, but it is ok because, eggs are used to keep the cake from falling apart, it has nothing
