The origin of empanadillas is known throughout the Caribbean, and Latin America. Empanada comes from the Spanish verb Empanar, which means to wrap in bread. Anywhere you go in Latin America empanadillas are very well know no matter what shape or size they come in. Empanadillas in English is called a beef turnovers. What I will be sharing is a recipe I have been making for years. My grandmother taught me when I was around ten. She would give me and my sister’s task. One would ground the beef, another would knead the dough, and so on and so on. Empanadillas are a Latin delicacy which can be made with a variety of different fillings: meats, seafood, cheeses, vegetables or even a combination of the three. The filling is wrapped in a circle shaped dough and fried until ready to serve. They are delicious and very easy to make despite the many steps it takes. You can buy the disc at a supermarket, which you can find in the frozen section aisle, but I prefer to make my own dough.
I like to make empanadillas as appetizers for parties, snacks when my kids are on the run, and they need something quick to munch on. Empanadillas are good for a quick meal when you’re running late and you need to feed everyone quick. Every summer we go to the beach and every

I like to also use chicken you can mix them up a little. To make the ground beef, add it to a skillet and add your preferred seasonings garlic, chopped onions, and salt and pepper. My seasonings consist of adobo and sofrito, which the sofrito is also made from scratch. Sofito consist of onions, tomatoes, garlic, little peppers, cilantro, recao (which looks like cilantro), vinegar, and olive oil. Drain the meat after it is done cooking, and let it cool down. My grandmother use to grow her own herbs, and I buy mine at the supermarket. Her sofrito was always better than mine, but she taught me well. FYI you can also buy sofrito in the
