Desserts Vs. Devil's Food Cake

Desserts are the most sensual food that man can eat. Some people say that because in our tongues the majority of the taste buds on the surface are sensing the sweet flavor. Maybe that is why we crave more for sweets and we have sweet tooth. Also sweets are different than each other. We have a lot of variety, and one type of sweets is cakes. We have different bases for cakes like foam cake, butter cake, low or no flour cakes. I would talk about two of them, Angel food cake and Devil’s food cake in the ways that they are different from each other, in technic, why they named by this name, also the history.

It is more airy and dark than the original chocolate cake because there is a lot of coco in the recipe, and “by the use of additional baking soda (sodium bicarbonate) which raises the pH level and makes the cake a deeper and darker mahogany color”(Wikipedia) . Not only a larger amount of coco but also a dark chocolate is in it. With traditional chocolate cake we often see just milk chocolate or same sweet, bitter sweet, chocolate. Devil cake is a batter cake base which includes creaming method. In this cake we have 3 parts of the mix. Mixture No.1 is a coco powder mixed with boiling water and when it cools down in some recipes there is milk combined in it afterwards. Mixture No.2 is the butter creamed with the sugar and the vanilla extract and the eggs. Mixture No.3 is the dry ingredients flour, salt, baking soda. Combining them all in a light beat and pacing it in a tin pan greased with butter and dusted with coco powder and we put it in the oven. You cannot stop eating it thought you know it is not good for you. The guilt would make you feel so good that you want to make this mistake over and over. But you also know that is a bad thing for your health and you should stop but somehow you do not want to. That is the reason why it calls devil’s food you know it is sinful but it is not a good reason to make you stop. The history of Devil cake is unknown. We can just say “Red Devil appears in the 1930s.” (food timeline) This cake was always under the title of chocolate cake. Sometimes it is mixed with the red velvet cake because the mixture of coco powder and baking soda gave it a reddish brown color. That is why it was called red devil’s food cake. Some food historians believe this might be the first mention of Devil's food in 1900. “Some food historians believe this might be the first mention of Devil's food. It appears in a memoir written by Caroline King's of her childhood in 1880s Chicago. Ms. King was a popular food writer in the 1920s-1930s.” (food timeline) We can see that the devil’s food cake was found in the 20th century. Along this century this cakes name changed but still the devil was the main word in the naming of the recipes.
Angel & Devil cake are so different from each other but they are both crowd pleasures. Over the years there was some changes and people put different flavors in them but always they go back
