2) Sugar cane is milled to grind it into a powder. The powder is mixed with water and enzymes are added, then heated to liquefy the starch meal. This mash is cooled and other enzymes are added to convert the starch into fermentable sugar. Yeast is added and the mixture is fermented to give sugar and carbon dioxide. When complete, the mixture contains about 10% alcohol. The alcohol is removed by distillation and is concentrated to about 96% strength. At this stage, the alcohol can be dehydrated to remove excess water giving anhydrous ethanol. As it will be used for fuel, the law requires this alcohol be denatured to make it unfit for human consumption.
