2.0 Introduction
Consumption of foods and beverages that encourages a healthy living, better health and lowering the risk of sickness has become very popular among the consumer whom are health conscious. Hence, a lot more attention is paid to different food extracts such as green tea extracts, grape seed extracts and ginger extracts as they posed excellent antimicrobial, antioxidant and anti-carcinogenic properties (Martin et al. 2009). These extracts have great potential in improving the quality and shelf life of foods by modifying the physiochemical and biological properties of the food (Martin et al. 2009).
Polyphenol (or catechins) extracted from green tea extract have shown an excellent antimicrobial effect against Bacillus Subtilis, Escherichia Coli, Proteus Vulgaris, Pseudomonas Fluorescents, Salmonella sp. and Staphylococcus Aureus (Bancirova 2010). Among all the catechins, epigallocatechin-3-gallate (EGCG) and Epicatachin-3-gallate (ECG) has shown the most potent in exhibiting antimicrobial activity due to the present of galloyl moiety present in their structure (Perumalla & Hettiarachchy 2011). Grape seed extract is rich source of polyphenol such as catechins, epicatechins (EC), and epicatechins-3-gallate (ECG) that possess the same antimicrobial effect as green tea extract (Perumalla & Hettiarachchy 2011).
