The subject is an adolescent female, she is 19 years old and African American. The subject lives on a military installation and has a diverse group of friends. I observed the subject eating dinner in her bedroom while watching TV and doing homework. The subject was eating homemade spaghetti with garlic bread in addition the subject chose water for her dinner drink. The Spaghetti sauce consisted of salmon, green, red, and yellow peppers, fresh garlic, onion, fresh spinach and grape tomatoes. The pasta accompanying the sauce was regular pasta instead of whole wheat or a vegetable blend pasta.

The estimated nutrition values where: Calories 515, carbs 86, fat 6, protein 27, sodium 275, sugar 6, sat fat 1, cholesterol 28, potassium 443, fiber 8, vit A 128, vit C 393, calcium 10 and iron 20 mg. During this meal, the subject did not get enough calcium; the subject would need this meal to have 434 mg of calcium. “The AI for calcium increases rom 1,300 milligrams for those age 9 to 19”. I would recommend that the subject drink milk or add a fruit high in calcium to her meal. I cannot say if the subject reached the recommended dosage of calcium due to me not observing her breakfast, lunch meals or snacks. It appears that the subject met the recommended amount of iron for this meal. The RDA for girls aged 14 to 18 is 15 milligrams per day.” The meal the subject ate did have nutrient dense foods such as bell peppers, spinach and tomatoes. I would recommend a change to the meal instead of regular pasta I would recommend changing to whole wheat pasta to add one more nutrient dense food to meal. Base on the meal being 1/3 of the subject’s nutritional needs the subject did not reach those goals. Her meal was low in the recommended carbs levels, fat levels, protein levels, fiber levels and potassium levels. However, I am not sure if the subject did not meet her daily allowance when eating her other meals and snacks throughout the
