Inflammation is our body's response to outside threats like stress, toxic chemicals, viruses, and bacteria. When the immune system senses one of the dangers, it activates certain proteins meant to protect cells and tissues. Normally inflammation serves as a friend (a sore throat for example).
If the immune system overreacts, the inflammation can be turned against our body. Many things can cause chronic inflammation but the most common is the food we eat and liquids we drink. This is where we have the most control.

Too much acid causes acidosis, which cause inflammation—very often chronic inflammation.
So we have to eat less acidic food (sugar is a big one, sugar substitutes except Stevia is another, dairy products and gluten are others. In the drink area soda, alcohol and many sport drinks are very acidic).
Acids come from the H+ ion that is weakly bound to many molecules and easily breaks off, many times forming H3O (hydronium) which is acidic. This acid buildup, even with the correct pH affects our insulin mechanism (which either has us consume more sugar or tells the cells to release it, both of which are bad). It also affects our body flora, which controls over 60% of digestion, (the bad bacteria thrives when acids are present).
