Chia seed an edible seed that comes from the desert plant named Salvia Hispanica, found in Mexico. This desert plant(in the mint family) date back to the Mayan and Aztec time. The word "Chia" means strength. It was believe Mayan and Aztec used the Chia seeds as an energy booster. Chia seed are concentrated food containing healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium, which explain why they used the seed as a energy booster. A better source of fiber than other fiber sources such as flax seeds, vanilla sheath waste, and wheat bran, because of its water retention capacity (WRC), cationic exchange capacity (CEC), organic molecule absorption capacity (OMAC), and water absorption capacity (WAC).

When buying Chia seed, look for white and black seeds, as they are the good choices, avoid red seeds (immature Chia seeds) and black seeds that are smaller than regular chia seeds(weed seeds). And choose the organic brand (this mean they have the "USDA Organic" stamp on it), one organic brand that I have brought and like is Nutiva, I have not brought a product from them that I did not like. Not only are you baking with less fat, the food will bake the same and taste the same (or better) from the addition of the chia gel. All you need to do is divide the amount of butter or oil in half, and then use the same amount of chia gel to fill in. The anti-oxidants in chia can even help keep the food tasting fresh
