Abstract: Curcuminoids including Curcumin ([1,7, bis-(4-hydroxy-3-methoxyphenyl)-1,6-heptadiene-3,5-dione]) are being found in rhizome from the common spice, turmeric; or known as Curcuma longa L. Curcuminoids are phenolic compounds which carry the antioxidant and anti-inflammatory properties. Researchers have demonstrated these properties can develop medical and pharmacological treatments for diseases such as Alzheimer’s disease and cancer. Turmeric (Curcuma longa L.) is presented in this report as investing its chemical and physical properties as well as in medical and pharmacological applications to address the complex and benefits of this spice to the world.

Molecular Structures of Natural curcuminoids. The curcumin will undergo Keto-enol tautomerization based on the pH of the environment, if the pH is less than 7, curcumin will dominate in diketone form in both solid phase and solution; while the pH is greater than 7, curcumin will favour in enol form in both solid and solution phase. Its unique characteristic provides different physical and chemical properties.
1.2. Synthesis Most of the curcuminoids have been synthesized by Pabon method from most literature reports, which through the condensation of the acetyl acetone (pentone-2,4-dione)-boric oxide complex and an aromatic aldehyde in addition of tributyl borate and butylamine at 60°C with ethyl acetate as the solvent.8 This synthetic method involves aldol condensation, by forming acetylacetone-boron complex, and cleavage of the complex via hydrolysis under acidic condition. The Pabon method indeed is an easy experiment to perform however, this synthetic procedure yields low to moderate of product. The synthesis of curcumin derivatives that is described by Xu9 has resulted a high purity and yield using Thin-Layer Chromatography (TLC) and ZF-1 ultraviolet analyzer. 2.
