INSTRUCTIONS
1. Preheat an oven to 250°F then coat a casserole dish with cooking spray.
2. Combine ground beef with eggs and minced garlic then shape into small balls forms.
3. Arrange the balls in the casserole dish then set aside.
4. Preheat a saucepan over medium heat then pour olive oil into it.

INGREDIENTS
2 lbs. cooked oxtails
5 cloves
1 tsp. pepper
1 tsp. nutmeg
4 cups low sodium beef broth
½ cup chopped carrot
2 tbsp. chopped celery
INSTRUCTIONS
1. Pour beef broth into a pot then season with cloves, pepper, and nutmeg. Bering to boil.
2. Once it is boiled, reduce the heat then stir in oxtail and chopped carrot. Cook until the carrot is tender enough but still crispy.
3. Once it is done, remove from heat then transfer to a soup bowl.
4. Sprinkle chopped celery on top then enjoy hot.

TIP
IT is recommended to cook the oxtails in the pressure cooker until tender before using them for this soup. If you don’t have any pressure cooker, you can boil the oxtail on a gas stove for about 2 hours.
