In the process of being a key holder, Markus was looking for another job, he was not sure this is what he wanted to do for another five years. On September 5th, 2011, Markus was asked to go to orientation for the next three weeks in Destin Florida for training to become an official manager. After those three weeks of training, he thought in his head, “hey I want to do this”. That October, he began his new position as official manager at Hooters in Mobile on Airport Boulevard. A normal workday at Hooters on the beach during the summer, is a hectic day. As an “opening” manager, you normally come in to the restaurant at eight in the morning. (They open at eleven) The first thing that needs to be done is seeing who switched shifts with who. After this, it is any and everything. Markus deals with callouts, counts the hostess and bar’s drawers for the amount of money that should be there before and after they close, turns on music throughout the restaurant, deals with venders, and makes sure the line check is done before eleven. As a “mid” manager, he or she comes in at twelve in the afternoon and immediately starts helping out with any problems that are going on at the time. This was one thing he wished he would have known before starting. It was a huge struggle that took two years to turn around. Advice for anyone wanting to become a manager at Hooters? “Get your game face on” is how he replied. He goes on to explain, “to be able to work at Hooters, you have to be ready to work hard the entire time you are there. The restaurant has an upbeat tempo that doesn’t allow laziness. There are people constantly yelling, but what else can you expect? We are on the boardwalk on the beach!” One thing he has loved learning while working at Hooters, is how to do inventory. This includes putting in numbers and learning the cost of everything. In all of his years working at Hooters, Markus has reached his greatest accomplishment this year. Hooters usually hits between two-point-three and two-point-four million dollars in sales each year, but so far in two thousand sixteen, they have hit two-point-five million. This will move them into a new bracket pool for management bonuses. He is very excited about this! Like anything else in life, you have to work up to things. You have to crawl in order to walk.
