One of the questions I first read is from a lady named Colleen, who sounds like was in a similar position as Jenny. She had been feeling ill for 3 years and was waiting on the results of her biopsy and was wondering when she would ever feel normal again. The response was giving by EA Stewart, who had titles of MBA, and RD so is obviously knowledgeable. Her answer to Colleen was a little encouraging saying that it will take time but as the GI tract heals she will feel better. She points out that everybody suffering with celiac or even gluten insensitivity wants a quick fix because gluten can be so hard on ones' body. Stewart reminds Colleen that medically speaking there is no definitive answer on when she will feel better but sticking to a strict gluten free diet will help somewhat in the beginning but will get better and better as time goes by (Stewart, 2011).
After a few weeks of the gluten free diet Jenny felt good enough to start running again. She continued to drink lots of water and ran as much as she could in the morning. She found gluten free bakery's in her town and located all the gluten free shelves in the grocery store. It was not a huge adjustment eating gluten free as she had always been health conscious but it definitely took more time to plan and try new
