Case Study: Payette High School

Payette High School operates three concession stands during various sports seasons.
The stands are located at the Payette Soccer and Track complex, Harmon Killebrew Football Field, and in the school’s gymnasium, or the Dome.
Historically, different groups, including the athletic boosters had tried to operate these stands with mixed results. Service, product offerings, and prices were inconsistent. The Payette School District administration could not track finances and, at one point, had to even help pay bills.
Eleven years ago, school administration asked if the marketing department wanted to run the concession stands as a school-based enterprise. Students sign up to work in the stands and money earned is applied to their DECA travel
