The risk assessment in any industry is very important, can use to direct potential intervention strategies at different food processing steps. in this case, the risk of Listeria monocytogenes can be potential sources of contamination from milk source especially if this cheese made from raw milk and by traditional methods and manufacturing process, and this happened in this case, one of main source of hazards in Lanark Blue cheese by used of Ewes raw milk. According to the normal standard of this product should be made from pasteurised milk, in addition the producer (Errington company) said the Lanark and Dunsyre blue cheese are turned by hand and there is physical contact in the process, and that very clear the failures of hygiene cause problems and risk, not only in unpasteurised milk cheese but also in pasteurised milk cheeses.

With such high levels of art and quality required to successfully produce cheese with a low existing competition in Ontario, this could be a strong option for Klahsen. Moreover, since the byproduct (whey) could externally be sold and help the company generate more profits and be a lucrative investment. Moreover, the idea of CSR for Klahsen of donating Monforte’s whey to local pig farmers, she would also be able to increase the firm’s brand loyalty over time. With regards to the financials, Klahsen would have to take into account the projected start-up costs for this option as well as the projected NPV of ~67000. Lastly, the other relevant factor that Klahsen would need to consider while making a decision is her supply chain that is not explicitly mentioned in the case.…

First, we would like to extend our deepest sympathies to all the families affected by the listeria outbreak. Together with the Center for Disease Control, we have determined that the processing equipment had a non-functioning part designed to spray an anti-bacterial solution on the cantaloupe. A chlorine spray should have been used to clean the fruit of bacteria. The source of neglect, if used, would have prevented contamination.…

In August 2011, 15 people became ill and were hospitalized with what was later identified as Listeriosis. Listeriosis is the result of an infection of Listeria monocytogenes, a bacteria commonly found in soil, water and decaying vegetation. L. monocytogenes can reside in the GI tract and vagina while the host remains asymptomatic and is not normally a cause of illness in the general population. Persons most at risk for Listeriosis are people with weakened immune systems which includes the elderly, pregnant women, neonates, and immunocompromised individuals. The lymphokine activation of T-cells on macrophages and interleukine 18 have been implicated in the protection against Listeriosis in healthy individuals, therefore persons lacking a robust immune response via these pathways are at greater risk for contracting the disease.…

One easy way to prevent getting contaminated by infected food is not to taste foods that smell or look irregular. Another easy way to prevent contamination is to stick with the recommended dates on the food labels. Our classmate Ron mentioned E.Coli and Salmonella, these two are food borne bacterias with salmonella being the most common cause of illness in the US.…

In the summer of 2008 Canadian healthcare professionals noticed an irregularly high incidence of listeriosis cases (“Listeriosis outbreak timeline”, 2009), the disease associated with infection by Listeria. This concern was disregarded until people in a nursing home fell ill and sandwich meat from the same place tested positive for the presence of Listeria monocytogenes (“Listeriosis outbreak timeline”, 2009). On August 12, 2008, the Canadian Food Inspection Agency launched an investigation of the Maple Leaf company and eventually all meat-products produced by Maple Leaf’s Toronto plant were recalled (“Listeriosis outbreak timeline”, 2009). L. monocytogenes is treatable and preventable, despite many resistant characteristics the microorganism…

Listeria is especially dangerous because it is able to grow, even in cold temperatures. Refrigeration will not kill the bacteria. Listeria is only killed by cooking out the bacterium and pasteurizing milk (Listeria). Once a person is infected, it is difficult to determine exactly which food contained the bacteria because the incubation period is so elongated. “Investigators typically assess food exposures for patients in Listeriosis outbreaks for the entire four to six weeks prior to the patient’s diagnosis, and patients often have difficulty recalling their specific food exposures” (Ryser and Elmer 306).…

The Nisin Bacteriocin Introduction Nisin is a bacteriosin peptide made up of 34 amino acid residues that contain uncommon amino acids such as lanthionine and didehydroalanine. It is a substance produced by both gram positive and gram negative bacteria to control the growth of other bacteria species to reduce competition for substrate and space. Nisin has received attention from researchers making it the most exploited bacteriosin (Shetty, Pometto and Levin, 2006). The attention from bacteriologist is due to its effects against gram positive bacteria that are usually common food spoilers and pathogenic. Industrial microbiologists have; therefore, studied nisin and derived a lot of applications that matches with its properties (Taormina, 2013).…

Quantitative risk analysis is the one which follows the Qualitative analysis, and gives a numerical priority rating to project risks (PMI, 2009). Based on the PMBOK (PMI, 2013) quantitative risk analysis “… is the process of numerically analyzing the effect of identified risks on overall project objectives (p. 333).” This is also a process for the PM and project team to get risk data to support making decisions, which can help to reduce project uncertainties (PMI, 2013, p. 333). Based on the prior researchers’ statement, the Quantitative Risk Analysis is more complicate and even the most difficult part within risk management since it requires statistical and mathematical methods to be operated (Purnus & Bodea, 2013, p. 145). Inputs of this…
