Case Study: Cluny Bistro & Boulangerie

Brief History and Overview

The Cluny Bistro and Boulangerie is in the heart of the Distillery District, surrounded by historic buildings. In 2003 the Distillery District opened to the public as a space conceived to house restaurants, art galleries, shops, studios and other trendy establishments designed to bring in foot traffic.

Opened in July 2014 by The Distillery Restaurant Corp. with Executive Chef Paul Benallick (formerly at Jump, Stock, Auberge du Pommier, and GBC Chef’s House), the Cluny Bistro and Boulangerie is a modern French bistro specializing in Parisian style classics with some modern twists.

Cluny Bistro’s dinner menu is extensive, and with many different options including both vegetarian and gluten free they are able to cater to a larger target market than a traditional French Bistro. The menu ranges from appetizers and small plates to entrees, raw dishes, cheese and charcuterie options.

Since they consider themselves as a high-end, the Distillery District is perfect for both the tourists and residents in that area. Distillery District is a popular tourist spot for their old-time architecture and atmosphere, so many tourists who go there are most likely to go to the different restaurants that are located inside. There are also many high-end condominiums so Cluny Bistro targets them also as their target audience. With their engaging décor and their menu, they can both attract residents and tourists alike to their restaurant.
