After letting the oil sit on the stone for about a half an hour (going longer won't hurt it) simply remove the excess oil from the stone with another clean rag. What this process does is create a layer of moisture to help expedite the oxidation process. Follow up as desired, usually about once a month for the first year.
Oiling sinks really isn't necessary, because the soap used in washings will only remove the oil anyways. Plus, soapstone in sinks tends to oxidize more quickly due to all of the moisture and greases they tend to be exposed to.
Cleaning soapstone is very easy, and any household cleaner can be used. Usually just wiping it down with soap and water is the best way to go.
