Aspartame is an artificial sweetener which is used as sugar substitutes. Structurally, aspartame is the combination of aspartic acid, a polar charged amino acid and phenylalanine, a non-polar charged amino acid. The chemical formula of this compound is C14H18N2O5 and the molecular weight is 294.3 g per moles. The functional groups of aspartame are one carboxyl group, one amine group, one amide group, one phenyl group, and one ester group (methyl ester). Although aspartame has aspartic acid in its structure, it is not very soluble in water. The solubility of aspartame depends on pH and temperature. Basically, the lower the pH is, the higher the solubility of aspartame is. For example, at pH 2.2, the solubility is 20 mg per mL while the solubility is 13.5 mg per mL at pH 5.2. However, there are also many complaints about aspartame from the patients. The symptoms of using aspartame are psycho-neurological signs (headache, dizziness, change in mood, ADHD, seizures…), digestive signs (upset stomach), endocrinology disease (diabetes), or autoimmune diseases (lupus). Especially, patients with phenylketonuria (PKU), a genetic disorder, get worse if they take aspartame because aspartame contains phenylalanine in their structure. Actually, the patients can not metabolize phenylalanine. As a result, phenylalanines accumulate in their bloods, pass the blood-brain barrier, and damage the brains. Moreover, some theories wonder about the effect of the accumulation of aspartic acid in blood.
