Coconut is one of the oil crops (plants that can be extracted into oils).
In the past, Thai people used coconut oil as a fuel to light up the lamps, a substance in medicines, and an ingredient in Thai cuisine.
However, in recent years, coconut was accused of being the cause of many serious illnesses, such as heart disease, hypercholesterolemia, high blood pressure, etc. Many medical staff pointed that coconut milk and coconut oil should be avoided.

And the list goes on. In general, there are 2 types of coconut oil in the market. The first one is the refined coconut oil, which is extracted in high temperature to purify, bleach, and get rid of scents. This kind of oil is in pale yellow, odorless, and tasteless. It contains no vitamin E because the refining process dissolves all the vitamins. The second type is the virgin coconut oil, which is extracted from a cold pressed process. It is pure, as clear as water with coconut-scented, and full of vitamin E. Virgin coconut oil gains its popularity as healthy and beauty products. Coconut oil extraction process is not complicate at all. Just leave a coconut milk around 48 hours, the fats and the water will separate and a layer of curd will appear at the top. Then, spoon out the curd and simmer it until running dry. Or else, the fat in the curb can be used as a coconut oil as well.
Mr. Songkoch Sontaeh, a farmer in Muag Lek, Saraburi province, explained the method of extracting coconut oil from local knowledge step by step. First, pour coconut milk into a heat-resistant plastic bag and wrap it tightly. Then, hang the bag and leave it until the water and the curd separate. Finally, puncture the plastic bag by a needle and let coconut oil pour into a container. This is a very simple steps to make a coconut oil that everyone can do

Suradech Nilake, the brand owner of a cold-pressed coconut oil product, he informed that, “We called the method of extracting coconut oil a ‘dry process’. The coconut water will be removed first, then, the coconut meat will be shredded and heated to dry away the moisture. Finally, it will be placed in a hydraulic press to extract the coconut oil. This method produces the highest amount of oil and can be kept for a long time without adding any preservatives.
A book named “Coconut oil, its health and beauty benefits” published by Government Pharmaceutical Organization, addressed how coconut oil is good for health and beauty by explaining the physiology of coconuts.
Firstly, medium-chain fatty acids in coconut oil will not cumulative in human body. When consumed, they are quickly sent to the liver, providing the body with energy and increasing metabolism.
Secondly, 92% of coconut oil is saturated fatty acids, which their carbon atoms are linked by single bonds, so that hydrogen and oxygen cannot infiltrate. Therefore, the saturated fats are not harmful to cells.
Thirdly, Coconut oil has lauric acid, one of a components of breast milk, which helps strengthening immune system. Monolaurin is a compound from lauric acid with antimicrobial properties.
