Remy despite being a rat embodies superior qualities, he is clean, refuses to walk on all fours to avoid soiling food with dirty front paws. Remy’s rat colony comes across as a belonging to a working-class status. Rats live in close quarters near humans but in abject condition under roof and sewers. Rats are dirty and uncouth. They feed on garbage and leftovers and stolen food. They had to be steamed clean and purified before entering the restaurant to prepare food. The subtext embedded within the main text is a pellucid signal to taste and food related behaviours as markers of class distinction.
