Zucchini with Ground Beef
This recipe is for a healthy and delicious skillet dinner using zucchini, cherry tomatoes and ground beef. This dish will quickly become a staple part of your repertoire.
MAKES: 4 servings
PREPARATION TIME: 10 minutes
COOKING TIME: 15 minutes
Ingredients:
• 1 tablespoon Extra Virgin Olive Oil
• 1 medium Onion, chopped
• 2 Garlic Cloves, minced
• 1 pound Grass-Fed Lean Ground Beef
• ¼ cup Homemade Beef Broth
• 1 cup Cherry Tomatoes, halved
• 3 medium Zucchinis, spiralized
• Sea Salt, to taste
• Freshly Ground Black Pepper, to taste
• 3 tablespoons Basil, freshly chopped

Preheat the oven to 375 degrees F and line a baking dish with parchment paper. For the meatballs, mix together all of the meatball ingredients in a bowl. Make your desired sized balls from the mixture and arrange the balls in the prepared baking dish in a single layer. Cover with foil and bake for about 30 minutes. Remove the foil and bake for 10 minutes more.
2. Meanwhile, for the zucchini, heat the oil on a medium heat in a large skillet. Sauté the garlic for about 1 minute. Add the mushrooms and sauté for 4 to 5 minutes. Add the zucchini, olives, salt and black pepper and cook for 3 to 4 minutes. Stir in the parsley and remove from heat. Transfer the zucchini mixture onto a serving plate. Top with the meatballs and serve.

Zucchini & Beef Stew
This recipe combines the warmth of the beef with zucchini noodle greatly. The carrots, celery and spices in this dish really enhanced the flavor of the stew.
