Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.
Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
Bake in the preheated oven for 20 minutes, or until golden brown.
Over the years, I have played with this Shepard’s Pie recipe to make it my own. Make them with less liquid so that they are thicker; meanwhile, most people won’t know the difference. If you have a pastry bag with icing tips, this is a great way to crown your Shepard’s Pie with a fancy potato design.
Instead of fresh vegetables, frozen peas and carrots work beautifully in the Shepard’s Pie recipe. The diced carrots and peas are the perfect size that will require no further preparation. Dried or frozen onions also work well.
As for a complimentary side dish, a green gelatin salad is always fun. Betty Crocker has a great selection of fun St. Patrick’s Day
