Gnocchi with Zucchini & Olives
Servings: 4
Time Taken: 20 minutes
INGREDIENTS
1 pound gnocchi
2 tablespoons butter
1 pound zucchini
1 cup olives
Pinch of Salt & Pepper
1/2 cup grated Parmesan cheese
1/2 cup chopped Basil

PREPARATION
Boil water in a large saucepan. Once water is boiling add the gnocchi, cook the gnocchi until they begin to float (estimated time 3-5mins).
Whilst cooking the gnocchi melt the butter in hot pan. When the butter begins to turn brown toss in the olives and zucchini and softly stir.
After about 2-3 minutes add a pinch of salt and pepper whilst constantly stirring for another 2 mins.
Sprinkle the parmesan and basil into the pan.
Add the gnocchi whilst still stirring.
Serve it on a plate and enjoy the beautiful
