Inability to synthesize vitamin C (ascorbic acid, antiscorbutic factor) is due to the lack of which enzyme?
Gulonolactone oxidase (the last enzyme in the Vit. C synthetic pathway)
What are the food sources of vitamin C?
Asparagus, papaya, oranges (and orange juice), cantaloupe, cauliflower, broccoli, Brussels sprouts, green peppers, grapefruit, kale, lemons, and strawberries.
Does vitamin C need to be digested in order to be absorbed?
No. Absorption of ascorbate across the brush border occurs throughout the small intestine, including the ileum.
What is the RDA value for vitamin C for men and women between the ages of 19 and 30?
Men: 90 mg/day
Women: 75 mg/day
What reactions in the body is vitamin C involved in?
Collagen synthesis, carnitine synthesis, tyrosine synthesis and catabolism, and neurotransmitter synthesis.
What two minerals does vitamin C interact with?
Iron and copper. Vitamin C enhances intestinal absorption of nonheme iron.
How is vitamin C deficiency manifested in the body?
Also known as scurvy, from latin word scorbutus (antiscorbutic acid). Scurvy occurs when total body vitamin C pools fall below about 300 mg and plasma concentrations drop to <0.2 mg/dL.
What are signs and symptoms of vitamin C deficiency?
Bleeding gums, small red skin discolorations caused by ruptured small blood vessels, sublingual hemorrhages, easy bruising, impaired wound and fracture healing, joint pain, loose and decaying teeth, hyperkeratosis of hair follicles on arms, legs, and buttocks.
