Grapes are destemmed.
Pre-crushing, the whole grapes are heated to 80˚C (170˚F) for 2 minutes, then rapidly cooled. The heat really affects only the skins: this aids in extraction of color, softening of tannins, and kills many of the enzymes that make the grapes oxidize quickly. Therefore the need for sulphur is reduced.
Natural yeasts.
15 day ferment, then blended and matured in oak foudres (50 hL)

What is 'Hommage a Jacques Perrin'
A Chateau Beaucastel blend created when the winemakers found a particularly good barrel of mourvedre that “required special treatment.” They blended a different blend than their standard CdP, including some particularly good Counsoise, and created a bottling in homage of their father.

After alcoholic fermentation, the red wine is aged for 18 to 24 months in oak, utilizing just 10% new oak since Gérard Chave believes that its use is unnecessary to add structure to his wine (this makes the 250 odd cases of Cathelin a bit of an anathema since it is aged in 100% new oak - more on that later.) The wine is bottled without filtration and fining only if truly necessary. The white wine is aged 80% in oak, the remainder in stainless-steel vats with a similar level of new oak.

Maturation is done in 100% new oak. Casks made in Burgundy from Tronçais oak.
Guigal believes that new oak develops a wines aromas faster than in a foudre, and that old oak casks are dangerous because after time cleanliness cannot be guaranteed.

Give a brief history of Vieux Telegraphe.
Vieux Télégraphe was established in 1898 by Hypolithe Brunier on the highest terrace of the Châteauneuf-du-Pape appellation, called Plateau de la Crau. Today, the domaine extends over 170 acres and is one of Châteauneuf-du-Pape's leading wineries year in and year out.
VT is based 100 percent on [grapes from] the La Crau plateau, which is well known for producing grapes with a big potential for minerality and richness.

Frédéric & Daniel Brunier make the wine.
