Who is the Abbot of Lamego?
|
Two englishmen who were vacationing in the Douro are said to have stumbled upon the Abbot and his fortified sweet wine. Discovering Port in 1678. However the house of Kopke & Co. had been trading in Douro wines for 40 years before that. The importance of the Abbot's wine was that brandy was added durring fermentation not after. British houses focous on vintage. Portuguese on Tawney styles.

What is an autovinifier?

ingenious enclosed device that uses carbonic gas pressure built up durring the fermentation process to "pump"the juice up over the manta or cap to extract color.

Describe the port vinification process.
|
Port is vinified into a still wine.
Ferments at 90F. Aguardente is added when fermentation produces 6-8% alcohol. Perserves sweetness. This is about 90 grams of sugar per litre. |

After Port is made where does it age?
|
Until 1986 port had to be matured down river at in the town of Vila Nova de Gaia. This change has helped smaller producers make and export their own port leading to increased competition for the big houses who used to be the only ones able to afford to age their wines. Vila Nova de Gaia is cooler tempered by the Atlantic ocean. Whereas Port aged in the Douro suffers/benifits from "Douro Bake" Ageing faster loosing color, browning, and aquireing a carmelized note.
