Vitamin A
Precursor is beta carotene. Functions include vision, maintenance of skin membranes , beta-carotene is an antioxidant. Food sources: performed vitamin found in animal fats, beta carotene in dark green veggies and deep orange fruits and veggies. Added back to skim milk. Deficiency includes hypovitaminosis Ak one symptom is night blindness- xerophalmia= irreversible blindness. Toxicity includes hypervitaminosis A-supplements increase risk. Hypercarotenemia is much more common.

Vitamin D
functions promotes the mineralization of bones, increases calcium and phosphorus absorption and calcium mobilization from bones. sources include self synthesis from the sun and fortified milk. deficiencies: tickets in children, osteomalacia in adults; misshapen bones; older adults at risk due to reduced ability to convert to active vitamin D, reduced intake of milk.
Vitamin E
functions as antioxidant, stabilization of cell membranes. food sources include polyunsaturated plant oils, green leafy veggies, whole grains. deficiency: red blood cell leakage (aka erythrocyte hemolysis), anemia.
Vitamin K
functions: blood clotting. sources: bacterial synthesis in GI tract, green leafy veggies. deficiency: hemorrhaging. toxicity: interferes with anticoagulants. free radicals - arise normally during metabolism
