Erythrocytes
(red blood cells), are the cells that transport oxygen
Leukocytes
(white blood cells), are the key to our immune function and protect us from infection and illness
Platelets
are cell fragments that assist in the formation of blood clots and help stop bleeding
Plasma
the fluid portion of the blood, and it is needed to maintain adequate blood volume for our blood to flow through the body easily
What are the four components that are visible when blood is drawn and spun in a centrifuge?
1. erythrocytes (red blood cells)
2. Platelets
3. white blood cells (leukocytes)
4. plasma (fluid portion of blood)
Hemoglobin
Oxygen-caring protein found in erythrocytes

*hemoglobin depends on iron!
*(2/3 of the body's iron)
Myoglobin
another oxygen-carring protein that is similar to hemoglobin; transports and stores oxygen in the muscles

*10% of total iron in the body
Heme iron
is a part of hemoglobin and myoglobin and is found only in animal-based foods such as meat, fish, and poulty

*more absorbable than non-heme iron.
Non-heme iron
is the form of iron that is not a part of hemoglobin or myoglobin.

plant-based foods

*absorption is influenced by the individual's level of stomach acid
