What is an enchilada?
|
An enchilada is made from a 6-inch corn tortilla. The tortilla is rolled around a monterey jack cheese, cheddar cheese, diced onion and New Mexico Red Chile Sauce mixture. This can then have meat added to the inside and is covered with sauce and grated cheese and baked.

How is an enchilada different from a burrito?
|
A burrito is made with a flour tortilla and rolled with the ends closed. An enchilada is traditionally made with a corn tortilla and the ends are left open.
