Cask aging develops woody, roasted and spicy notes (oak, cedar, coffee, cocoa, vanilla, liquorice etc.), bottle aging adds animal and earth notes (game, leather, truffle), peppery notes in the Petit Verdot.
Medoc wines are high in tannins and can be rather unapproachable when too young. |
