Define "sur lie".
Wine aging on top of the dead yeast cells left over from the secondary fermentation. As the cells break down they release amino acids into the wine creating a toasty, nutty bouquet.
What is a pupitre?
An A-shaped rack that holds Champagne bottles during the remuage/riddling process. Bottles were eventually stored "sur point"-totally neck down.
