Unsaturated fatty acids
Have carbon atoms available for hydrogen bonding.
Saturated fats
Have all carbon atoms bound to hydrogen atoms.
Trans fatty acids
Are created when hydrogen gas is added to vegetable oil. They can inhibit the exchange of CELLULAR fluids; damage the PROTECTIVE BARRIER around each cell and cause the MITOCHONDRIA of the cell to swell up. They are not suitable replacements for the natural CIS FATTY acid configuration of non hydrogenated natural fats.
