Vitamins
Play a key role in many chemical reactions in the body
Fall into two broad categories
Water-soluble: B-vitamins, Vitamin C
Fat soluble: Vitamins A,D,E,K
Vitamin deficient can lead to serious homeostatic imbalance
Minerals
Minerals fit into one of two groups:
Trace minerals those required in very small quantity: iron iodine, fluorine
Major minerals those required in greater quantity: calcium, phosphorus, magnesium, sodium, chloride, potassium
Functional foods
Food containing phytochemicals and other beneficial micronutrients are known as the functional foods
These consists primarily of fruits vegetables seeds nuts beans
