What happened in the Pellagra Epidemic in the US?
During the early 1900s, people were suffering from Pellagra due to their diet of mostly corn, salt pork and black eye peas. Salted pork had little niacin and corn has a lot of niacin. However, niacin in corn is inaccessible unless it is treated with lime water (alkaline). Corn treated with lime water and addition of eggs, meat, and milk helped treat this epidemic.

1.5-2 gm/day decreases LDL and increases HDL.
