Valpolicella, the basic red, Amarone a wine made from the same grapes as Valpolicella but dried out either on vine or on mats causing a much more concentrated wine but fermented to almost dry, Ripasso, a wine made by taking the left overs from creating Amarone and Recioto and repassing Valpolicella through it, creating a much more concentrated wine than Valpolicella but not as heavy as Amarone, Recioto, a wine made in the same manner as Amarone but left sweet to be used as a dessert wine.
Name the three most important DOCG's of Tuscany and what is the main grape in them.
Chianti, Vino Nobile di Montepulciano and Brunello di Montalcino, all three are based on Sangiovese (although they are different clones and are called by different names.
Explain Super Tuscan.
More of a marketing term. Basically a producer who doesn't want to adhere to DOCG regulations in order to create a better wine. It could be a Sangiovese based wine (Tignanello, Flaccianello) or based on international varieties (Sassicaia, Ornellaia).
