Highballs (general information)
|
Served in an eight ounce highball glass. Build on ice. Add 1 oz. alcohol. 2 oz. filler (1/4" from the top of the glass). All clear drinks get a lime wedge. Do not stir or mix. Serve with sip stick facing customer.

These drinks should never be shaken. They are stirred or swirled in a mixing glass with ice and strained either "on the rocks" or "up" into a chilled Martini class.
Vermouth is an aperitif wine which is available both sweet (red) and dry (white). The less vermouth, the drier the drink. Basic Recipe: Stir & Strain. 6 - 8 Drops of Vermouth. 2 oz. Cold Alcohol. Garnish Rules: Martini = Olive, Gibson = Onion, Manhattan = Cherry, Perfect = Lemon Twist |
