Made from savagnin - yellow wine, oxidized may age for decades, after ferment, kept in barrel for 6 years. not topped off, voile developes similar to flor, not fortified. Chateau Chalon is the AOP.

straw wine can be labeled Arbois, L'toile or Cotes de Jura. ripe, but not botritis grapes dried on straw mats, or hung in boxes, shrivel to achieve must of 320 g/l. at least 14% alcohol . 3 years of aging, including 18 months in neutral barrel.

Aged Marc (grape spirit) added to unfermented grape must. Red white or rose and must be aged for one year.
