Junma

pure rice water sake/ rice must be polished to at least 70%= 30% of the outer portion of rice has been taken away/ full solid flavor/ manly/ a bit heavier and fuller than other types, and the acidity is often a touch higher as well




some say vanilla smell? awakens taste buds, have a slight burn going down

Honjozo

Rice water sake + a little distilled alcohol/ help extract the flavor and aroma. light, mildly fragrant and easy to drink

Ginjo

More labor-intensive to make/ using highly polished rice (at least 60%), brewed with special yeast, and fermented at colder for longer/




Light, aromatic, fruity and refined. Can have added or non added/ easy to drink and often

Daiginjo

brewed with very polished rice (at least 50%) even more labor.




Generally light, complex and quite fragrant

Sake process

Water, rice and koji.


harvest rice, polish, wash, soak, steam (make outside of rice hard and inside [starch area] soft), koji making, koji converts the startch to sugar, yeast added then consumed the sugar which creates alcohol called [fermented sake], added to a press and filter to remove extra stufff --> pasteurize (stops the fermenting process making sure sake doesnt spoil), let sit for 6 months/ 1 year, the diluted to lower the alcohol level, second pasterizing


Koji mold is sprinkled over rice converting the starch in the rice to glucose (sugar), then premium yeast converts the sugar to alcohol

Sake facts

1) the longer the polish the cleaner the sake flavor


2) koji is rice covered in koji mold


3) sake is transparent. Nigori sake is cloudy and unpasterized
