Sake process |
Water, rice and koji. harvest rice, polish, wash, soak, steam (make outside of rice hard and inside [starch area] soft), koji making, koji converts the startch to sugar, yeast added then consumed the sugar which creates alcohol called [fermented sake], added to a press and filter to remove extra stufff --> pasteurize (stops the fermenting process making sure sake doesnt spoil), let sit for 6 months/ 1 year, the diluted to lower the alcohol level, second pasterizing Koji mold is sprinkled over rice converting the starch in the rice to glucose (sugar), then premium yeast converts the sugar to alcohol |
