I agreed with you that the witches' sabbaths were mainly created to accused other groups of people of involving in witchcraft. But, I also believe that these witches' sabbath did occurred although not as exaggerated as we might have led to believe. I think it was very unfortunate how religion can cause people to comes up with lies like this just so that they could prosecute another religious group who they considered as pagan. I also thought that the idea of witches being able to separate their soul from their physical body to be very far fetch, however, it does lead to some very interesting theory for such as the haunting of spirits is actually the soul of witches causing mishaps among people.
